&nbsp;<strong>敖溪杨记老砂锅</strong></p><p class="">&nbsp; &nbsp;自古以来,敖溪就是乌江北岸的行政、经济中心和交通、商贸节点,集市贸易特别发达,由此也催生了餐饮业的兴起。</p><p class="">&nbsp; &nbsp;1903年出生的毛明英自幼家庭贫寒,父亲早逝,母亲体弱多病,17岁时,她就担起了家庭的担子,在敖溪镇上开了一个小餐馆,维持一家人的生计,主要经营砂锅饭、砂锅米线、绿豆粉等。21岁时,就连人带餐馆嫁给了邻居杨泽志,继续经营砂锅饭。</p><p class="">&nbsp; &nbsp;1948年出生的彭述秀不满4岁,父母就相继在灾荒中去世了,外婆收留她长大,从小就经历生活的艰难和不易,也更加懂得生活朴素的道理。她17岁嫁给毛明英儿子杨秀武后,就给婆妈打下手,一起经营小餐馆,很快就成了敖溪老街小有名气的厨子。</p><p class="">&nbsp; &nbsp;1975年,彭述秀的儿子杨刚出生,从小他读书不上心,却对妈妈做饭感兴趣,八九岁开始就经常跟着妈围着灶台转。初中毕业后,就在店里帮助母亲打理生意,也熟练掌握了母亲传承的全部技艺。1997年,杨刚全盘接手砂锅店,并注册了&ldquo;余庆县敖溪杨记老砂锅&rdquo;国家商标,并传徒授艺18人。</p><p class="">&nbsp; &nbsp;<strong>桥底麻糖</strong></p><p class="">&nbsp; &nbsp;麻糖是余庆特色传统食品,主要以麦芽、大米、玉米、红薯等为原料,通过打米浆、煮米、发酵、滤渣、熬制、冷却、扯糖、切糖等多道手工工序制作而成,香甜可口,尤以麦芽、大米做的为佳。成品有麻糖块、麻糖杆、麻糖丝等,也常用作做菜、食品加工的调料。桥底麻糖就是余庆麻糖的典型代表之一。</p><p class="">&nbsp; &nbsp;今天,小河麦芽糖已经成为村民增收致富的重要渠道。</p><p class="">&nbsp; &nbsp;<strong>土司酶豆腐</strong></p><p class="">&nbsp; &nbsp;清乾隆末年,余庆司(今敖溪一带)毛家沟出了一位俊俏能干的小媳妇~戴月明的妻子曹氏,做得一手好咸菜。每年冬至过后,余庆土县丞毛景凤家都要请她去做酶豆腐。曹氏年纪大了,就由她的儿媳任氏接着干。任氏的儿子戴儒林从贵阳贩盐到本地卖发了家,成了大地的大地主。任氏把毛氏土司府一个能干丫头雷氏赎出来,嫁给戴儒林做了二房,从此,做咸菜等一应家务就由雷氏担了起来。</p><p class="">&nbsp;
